Cheesecake Recipe Sour Cream Resource in Questions
Should sour cream be added in this cheesecake recipe? I'm trying to figure out if I should put sour cream this recipe. My friends said that sourcream makes the cheesecake sour. (The link to the recipe is below.) >
Best in Show replied: "You can put in Sour cream and it will make the Cheesecake more moist."

QueenofSummertime replied: "Yes, put it in. It won't make the cake sour. I make the best cheescake ever and it has sourcream in it- It has never turned out sour."

Why do many cheesecake recipes require sour cream to be spread on top? I recently made a cheesecake that required a sour cream mixture to be spread on top after baking the cake for 40 minutes. It seems that this is common in many cheesecake recipes, but why? Does the sour cream do anything to the cake, such as retain the cake's moisture or add flavor?

Jennifer replied: "Sometimes, it counteracts the sweetness of the cheesecake, making it a little more "cheesy" and sour. It's good. It's not lemon-y sour, but a good sour."

lovelorn guy replied: "Because sour cream is gooooooooood."

Cheffy replied: "Simple answer: to hide any cracks that may have formed on the cheesecake."

2Beagles replied: "I wondered that myself too, since I really don't like the taste of plain sour cream. I'd much rather have a fruit topping or fruit glaze on mine."

butterfly replied: "My friend told me once that it's because it seals the flavour in and makes up most of the "cheese" part of cheesecake. Another of my guesses is that sour cream adds the fatty part that makes most cakes really good?"

Can I completely cut the sour cream from a cheesecake recipe? I want to make this recipe: but, I don't want to use sour cream. 1.) I don't have any and 2.) I don't think I'll like the flavor it adds. Can I completely cut it out without replacing it with anything?

It requires cooking of 20 minutes for each layer (two layers, you cook one then take it out and add the second one on. Im not sure if the sour cream layer or cream cheese layer is first?. I left out the sour cream in a cheesecake recipe... is it worth serving, or should I make another one??? The recipe called for 3 eggs, 2 packages of cream cheese, a little lemon juice and vanilla. Of course it also had a pint of sour cream I forgot... is it servable? It also called for 1 cup of sugar...

Linda B replied: "Yes, it will just be sweeter....."

Willow replied: "Of course it can be "served," anything can be. But it's going to taste like crap. Make another one."

arf_rawmeat replied: "it's just going to make the cheese cake more sweeter...i'd still serve it!"

Danny replied: "DUDE! You need to ask?! Dip yer finger in the bowl! Is it SAVORY?! If it fails yer finger test...then serve it not!"

Hazel B replied: "I am a evil duckies muhahahahahahahahahahahahahahahahahahahahahahahahahaha!!!!!!!!!!!!!!!!!!!!!!"

Muggles replied: "I left gas out of my car it is worth driving? Come on! It's cheese cake! If all else is questionable cut it and eat a piece if it tastes like hoobistank don't serve it if it is good then melt some chocolate on each piece and garnish with mint leaves they will be impressed."

baby_doll replied: "Did it call for it to be mixed in or put on top? My recipie calls for it too but, it goes on top of the cheesecake. Bake it an additional 5 minutes, and chill. Top with your favorite topping. No one will know the difference."

nuckin futz replied: "I've never cared for that sour cream topping on cheesecake, go ahead and serve it without, it will be good. Spooning a little fruit sauce over it is much better."

foxygoldcleo replied: "I would spread the sour cream on the top. I had a cheese recipe that called for that. It actually adds an interesting contrast when the cake is cut. But I would taste it before tossing it, you may be pleasantly surprised."

marklemoore replied: "Yes. It will be sweeter and perhaps a little lighter. What about the flour, or didn't you use any? If not, then it will probably fall in on itself after baking. So the finished product would be a little denser but edible."

Stella D. replied: "I've honestly never heard of putting sour cream IN a basic cheesecake recipe. You don't mention putting any sugar in it, either. The basic cheesecake recipe calls for: 2 pkg. softened cream cheese 1/2 c. sugar 1/2 tsp. vanilla 2 eggs 1 - 9 in. graham cracker crust Bake 350 degrees for 40 minutes. Cool. Refrigerate 3 hours. Or another alternative recipe calls for: 2 pkg. (8 oz.) softened cream cheese 3 eggs 1/4 c. lemon juice 1 - 14 oz. can sweetened condensed milk 1 - 9 in. graham cracker crust. Bake 300 degrees for 50-55 minutes. Cool. Chill for 3 hours or overnight. Both can be topped with sour cream and baked an additional 5 minutes."

Ya_Man replied: "Cover it with a sauce and some whipped cream and laugh it off. Try a nice liqueur with it, like amaretto or Tia Maria."

Lauren replied: "You could always slice the cheesecake up and separate the pieces on a larger platter... This way you can take a taste to test it yourself. No one will ever know, and it will look great! :) Hope it's good... Merry Christmas, God bless!"

crystal replied: "i've never heard of sour cream in a cheescake sounds disgusting, i'm sure it will taste fine we make ours without sour cream and it's way good."
